How Clextral Is Making Plant-Based Meat Less 'Veggie' and More 'Vroom'

Clextral SA, in partnership with the HES-SO Valais-Wallis, has developed and patented an innovative technology for the production of vegetable meat.

This innovative technology, developed by two professors from the Haute École d'Ingénierie Michael Beyrer (Institute of Life sciences) and Laurent Rapillard (Institute of Systems Engineering) located on the Energypolis Campus, combines the principle of a shear fibration process with a continuous extrusion process. It enables the manufacture of higher-quality fiber products than those currently available, based on protein-rich raw materials such as legumes. 

Clextral's Galaxy Texturation technology is capable of producing up to 450 kg per hour of textured product, opening up new opportunities for the production and consumption of alternative proteins.
